Pakistani Black Salt (Kala Namak)

Black salt, or kala namak, starts as rock salt from the Salt Range and is fired in a kiln until its mineral content is transformed. The firing is what the buyer is paying for: it produces the dark crystal, the pink-grey powder and the sulphurous aroma that the culinary trade uses it for.
